Ingredients

  • 200g unsalted butter, softened
  • 200g golden caster sugar
  • 1 egg
  • 1tsp vanilla extract
  • 400g plain flour, plus extra for dusting

Method

  • STEP 1

    Put the butter in a bowl and beat using electric beaters until soft and creamy. Beat in the sugar, then the egg and vanilla, and finally the flour. If the dough feels sticky, add a little more flour and knead it in. Bring together into a ball and use to make our raspberry dodgers, vanilla spirals, checkerboard and ginger biscuits.
